Founded in 2006 at the foot of the iconic Covey Hill mountain in Hemmingford, Domaine des Salamandres is a family-run estate that stands apart through its commitment to sustainable viticulture and natural winemaking — preserving the full aromatic complexity of both grapes and pears. Its ice pear wines (Classique, Limitée, and Tabarnak cuvées) have earned repeated recognition at international competitions and are considered a benchmark of quality in Quebec.
The product range is built on hardy Quebec grape varieties (Vidal, Geisenheim, Frontenac) and four varieties of frost-resistant pear trees, yielding dry and sweet whites, maceration wines, passerillé reds, ice wines, and a frozen pear mistelle aged in oak barrels. Visit the boutique for a guided tasting, then settle onto the terrace for a charcuterie board and local cheeses from nearby artisans in the cozy on-site bistro.
